Founder

Fleur Verwijs

Fleur Verwijs, a native of the Netherlands, found her calling in the world of hospitality at a young age.  After starting at a local casual restaurant she discovered an innate talent for service and a genuine love of culinary experiences.

Fleur’s passion for the craft and love for travel led her on a journey through Belgium, Austria, Ireland and Spain.  During this time, she was exposed to many different types of cuisine and service.  After working for multiple restaurants across Europe, it was in 2022 when she decided to embark on a new adventure across the Atlantic.

Ms. Verwijs's journey to the US landed her at the Michelin-starred Protégé where she began her journey in elite restaurant management in the highly competitive Silicon Valley market. She took over the critical role of Assistant General Manager (AGM) at the 1-Michelin-star restaurant. During her tenure, she was responsible for optimizing complex front-of-house operations, maintaining exacting service standards, and contributing to the restaurant’s continued success and acclaim. This position proved instrumental, allowing her to forge invaluable professional connections and relationships with high-caliber service and culinary staff, which now form the proprietary talent network that powers True Latitude Advisory.

Demonstrating her adaptability and dedication to operational excellence, Ms. Verwijs subsequently returned to Europe, where she successfully took over the leadership and management of another celebrated 1-Michelin-star restaurant, COME by Paco Méndez. Her successful oversight of this internationally recognized venue further solidified her reputation as a leader capable of driving excellence, maintaining consistency, and navigating the demanding landscape of high-stakes, international fine dining.
